What Butter Is to Paul Dean...

...is what mustard is to me.
But we'll get to that shortly, after starting with a mustard-free start to my day. And the power stayed on! Score.

Oh, delicious breakfast, I love you so much. Looks like I burnt my pancake in the toaster! haha. I actually did, but only a tiny bit. Added character, I say. Topped with pure Almond Butter, strawberry jam, and a slice of banana or two, hehe. On the side: banana (duh.) and two fried egg whites. That were oversalted. I picked up some new seasonings and apparently there is way more salt in "French Fry Seasoning" than I had anticipated. Eh well.

Afterwards, tried to make myself look the most presentable I could considering I was going showerless (I am not a "shower in the morning" kinda gal. sorry folks.) to school. Was relatively successful, but I probably stunk.
Classes went by pretty quickly so I came home for lunch and to shower. Still have another class in a couple hours, but I like coming home for lunch and a shower was desperately needed. Haha. So before I got stink-free, I chopped up a sweet potato to roast! I haven't had a sweet potato in forever and finally picked some up from P.Chop the other day. I mixed it up in an oven-proof casserole dish with a chopped carrot, parsley, honey mustard, some leftover diced tomatoes, s&p, parmesan, and tons of curry powder. I prefer my sweet potatoes savory rather than sweet, and with curry powder they are amazing! I like to make them fries, but I didn't want to take that much time cutting them up and wasn't sure if they'd burn while I was in the shower since they'd be skinnier.
What's your favorite way to eat sweet potatoes? Or your favorite vegetable?
Paired with a small side-salad and viola!





Made me feel bad for neglecting sweet potatoes for the past month or two! They are so amazing. This is only half...I'm still trying to make my way through it, though - the other half may need to be leftovers!

Don't be afraid of the curry powder. Go liberal!



I've realized lately I haven't done too much experimenting with more "exotic" veggies, like celery root, kale, etc. I've been dying to try kale! So, I ask you:
What is your favorite vegetable? Least favorite?

Guf - I am full! Off to go powder my face and catch up on blogs, too, if I have time. See you guys for dinner! I'm thinking a falafel wrap :) If the class runs until 7 like it's supposed to then that means a late night, so I'm glad I've got some already made up!
Is it sad that when I get bored in class I start thinking about what to have for lunch and dinner regardless of how hungry I am?

    I had sweet potatoes for dinner! I just roasted them with some olive oil, salt and pepper then dipped them in BBQ sauce! Yours look way more exciting than mine! Then again most of you food does haha!

  2. I with you, love the mustard. I used to stick with only yellow and honey mustards. I have been starting to like the spicier ones now too!
